To get a hood, the best way would be to go after the members of the cult, you get armor sets from defeating all cultists in a branch and I believe their is one cult branch that has armor focused more towards stealthy lightweight assassin armor with a hood on it rather than bulky mercenary armor.

No It goes down automatically in friendly zones, and back up everywhere else. Behold the angry wizard putt-putt-putting away. I hope it isn't an option, it makes more of a cinematic impact being automatic. If it was a controllable option it would have pretty much no impact amd would just seem like a useless option.

Theyare unlocked after Bayek shaves the first time in the story. Fair enough, haven’t gotten that far yet. It was changed in a patch. There are now icons next to the toggle good icon which change hair and beard. However, it should be noted that you don’t unlock them until Bayek’s hairstyle has changed in the story.
